This class will focus on how to make classic dishes with an emphasis on bringing a variety of ingredients to life, creating a holiday meal that offers a diverse tasting experience. Comfort classics will be presented using some ingredients that may not frequently appear on a traditional holiday menu. These ingredients honor and highlight the flavors of the holiday season with a twist. This class includes a combination of demonstration and hands-on teaching, as well as food sampling. Recipes for the items prepared in the class will be provided to students. Additionally, pie crusts and vegetable stock will be available for purchase. This workshop will include…

Norman Gonsalves is a cook, baker, and Pacific Northwesterner living in Portland, Maine. He has a knack for weaving his adoration of fruits and vegetables into American comfort creations. Eating and cooking with plant-based ingredients with international influences informs his style, using French techniques to curate a variety of familiar comfort dishes with a wide range of ingredients from around the globe.
